Lemon Snap Cookies

I mentioned these cookies in my post, This is the Song That Never Ends. I promised the recipe to Hope. I figured if I was typing it up anyway, I might as well put it here for everyone. If you like lemon as much as I do, then you MUST try this recipe. It is worth the expense of the candied ginger to make it. Allow for a large jar. I warn you that this are irresistible and will be gone quick.

1 1/2 sticks butter, softened
1 1/2 cups sugar
1 large egg
1 tsp. lemon extract
2 cups all purpose flour (I use unbleached)
1/2 tsp. baking powder
1 tsp. ground ginger
1/4 tsp. salt
grated zest of 1 lemon
1/3 cup minced crystallized ginger

1. Preheat oven to 375
2. Mix butter and sugar until light and fluffy. Add egg and lemon extract. Beat until combined.
3. Mix dry ingredients together plus lemon zest.
4. Combine dry ingredients with butter mixture. Add crystallized ginger and mix until combined.
5. Roll dough into 1 inch balls. Space on ungreased baking sheet 1 1/2 inches apart. Bake until lightly golden brown, about 10-15 minute.
6. Place on wire rack to cool.

  4. I've never tried crystallized ginger. I'll have to try it now. We're due for a grocery shopping trip, I can just add that on.
