Chicken and Noodles

I make this delicious and super easy recipe quite frequently during the colder months. It is great for a crowd because it is quick, easy and can be increased without a lot of fuss. It can sit for a long time and is one of those great dishes that are even better leftover.

You will need:

4 Boneless, skinless chicken breast

1-2 can (enough to cover the meat) chicken or beef stock, consomme, broth, or equivalent bouillon cubes

8 ounces cream cheese

1 carton sour cream (I prefer the regular kind-it gives a creamy consistency)

1 cup cooking sherry

1 package egg noodles

1. Put chicken in crock pot and cover with liquid. Cook until chicken is tender. About 4 hours on high, 8 hours on low.

2. Remove meat to platter and cover with foil to keep warm.

3. To crock pot add cream cheese, sherry and sour cream. Stir well. Cook until the cream cheese is melted. Stir again to blend the ingredients.

4. Meanwhile cook egg noodles according to package directions.

5. Layer noodles on a large platter. Place chicken on top.

6. Cover with sauce.

This is a nice winter dinner with a garden salad on the side. Our family does not eat much meat so I cut the chicken breast in half and this serves nine of us with leftovers the next day. I double or triple it for a fellowship dish. If you have some hearty boys, like Amy, you may want to increase my measurements.

    Wow! It sounds really good and yummy!!!

    I worked hours and hours on my pc, but my "loved" virus are still here! I had the illusion that everything was ok again, but today when I have turned on my pc, I have noticed something strange again!
    So I have said to myself: "ok, Manu, I think you should have a very big cup of coffee tonight!"

  5. I am going to try this recipe. I just have to find the cooking sherry in the store, first! It sounds delicious. You can't go wrong with cream cheese. And I will have to use a few more chicken breasts!
