Gram's Cheese Balls

This time of year, one thing we like to keep on hand is a few batches of my Gram's cheese balls. We make and freeze them so we can pop a tray in the oven for parties, evening snacks while we wrap gifts or unexpected visitors. These are always a huge hit, even with people who do not like olives. At my grandmother's funeral, I can not tell you how many people went on about her "cheese things". Even the man eulogizing had to say how much he loved, "Millie's cheese balls."

Put some up in your freezer, they take just a few minutes to whip up, and I assure you that you will always wish you had made a few more.

4 Tablespoons butter
3/4 cup flour
1 cup grated sharp cheddar cheese
1/2 teaspoon dry mustard or dijon mustard
pinch of salt
green olives with pimentos, drained and spread on paper towels to dry while you mix dough

Mix all together with hands or in kitchenaid fitted with paddle. Scoop out small amount of dough and flatten in the palm of your hand. Place an olive on top and close your palm to shape dough around it. Roll between your hands to form into a ball. Place on ungreased baking sheet. If you are not going to bake right away, place your tray in freezer until frozen solid and then transfer to zip lock until ready to use.

When you are ready to bake, preheat oven to 400 degrees. Bake 20-25 minutes until just starting to brown. Time will vary depending on whether you bake right away or from the freezer. These cook up well in the toaster oven, if you don't want to heat up your whole oven for one tray.

I like to serve these on a doily with pretty party toothpicks.
