Debbie's Sweet Bread Cinnamon Rolls

My friend Debbie's cinnamon rolls are the best home made rolls I've ever had. Hers always came out better than when I make them and they remind me of Cinnabon rolls for anyone who has ever had the pleasure of eating one of those delights. I had a request for the recipe so here it is but I can't take any credit. When I make the icing I use about 8 ounces of cream cheese to 3 Tablespoons butter and 2 cups of confectioner's sugar because it cuts the sweetness a bit.

3/4 cup milk
1/2 cup sugar
1/2 cup butter
2 Tablespoons yeast
1 teaspoon salt
1/2 cup warm water
2 eggs
5 to 6 cups flour, divided
butter, softened
brown sugar

For the icing:
2 Tablespoons melted butter
2 cups confectioner's sugar
1 Tablespoon milk

Scald milk. stir in 1/4 cup sugar and butter.  Set aside to cool.

Dissolve yeast and remaining 1/4 cup sugar in warm water.  Set aside for 5 minutes until bubbly.

Mix milk, yeast mixture, eggs and 2 cups flour in kitchen aid.  Add enough remaining flour to make soft dough.  Knead 5-10 minutes.

Spray counter top with cooking spray.  Divide dough into thirds and roll each into a rectangle.  Sprinkle liberally with brown sugar and cinnamon.  Roll up tightly and cut each roll into eighths.  Place in three buttered cake pans.

Let rise in warm place until double.

Bake at 375 degrees for 10-12 minutes until light brown.

For icing:  Mix all ingredients until well blended and of spreading consistency.

  4. Oh I LOVE Cinnabons! I knew that's what I should have had yesterday when out with my mom. Oh well...another time perhaps. :)
